Grilled Asian-Style Eggplant with Gochujang Sauce O'Food

INGREDIENTS
- ¼ – ½ bottle Gochujang Bulgogi BBQ sauce from O'Food
- 2 tsp sambal oelek House of Asia (Optional)
- 1 eggplant
- ½ red pepper
- 2 tablespoons chopped peanuts
- Fresh herbs: coriander, mint, chives
- 1 lime
A METHOD OF PREPARING
- Slice the eggplant lengthwise into approximately 1 cm slices. Brush both sides with Korean BBQ Gochujang marinade and grill on both sides (on a grill tray) or in a grill pan until golden brown. After flipping, add the bell peppers, lightly drizzled with oil, to the grill as well.
- Arrange the vegetables on a plate. Brush the eggplant with a little more marinade and, for extra spice, a little sambal oelek. Sprinkle with nuts and herbs, and drizzle with lime.
