Vegetarian stroganoff with mushrooms
Vegetarian, delicious, and yet elegant, this jackfruit stroganoff makes a great filling lunch or elegant dinner. To prepare this dish, you'll need a few aromatic ingredients and less than an hour.
INGREDIENTS
- 2 cans green jackfruit drained and rinsed
- 1 spoon Worcestershire sauce
- 3 tablespoons of butter
- 1 red onion, diced
- 400 g sliced mushrooms
- 3 cloves of garlic, finely chopped
- 120 ml dry white wine
- ½ teaspoon dried thyme
- Pinch of salt
- 500 ml vegetable broth
- 1 teaspoon of potato starch
- 250 ml of thick cream
- 2 tablespoons of finely chopped parsley
A METHOD OF PREPARING
- Heat the butter in a pot and sauté the onion until translucent. Add the garlic and mushrooms. Cook for 10 minutes.
- Add the wine and simmer for 5 minutes, or until the sauce has reduced slightly. Add the jackfruit, thyme, and salt.
- In a separate bowl, whisk together the broth, cornstarch, and Worcestershire sauce, ensuring no lumps form. Pour the mixture into the pot, stir, bring to a boil, and simmer for 15 minutes. After this time, break the jackfruit into smaller pieces using a wooden spoon.
- Finally, add the cream and cook for another 5 minutes.
- Serve the dish sprinkled with parsley.
