Vegetarian Jackfruit Burger with BBQ Sauce
Jackfruit is a tropical fruit that, thanks to its fibrous structure and ability to absorb flavor and aroma from spices and sauces, makes a great meat substitute. Try this veggie burger recipe and surprise all your meat lovers!
INGREDIENTS
- 1 can green jackfruit drained, rinsed, cut into strips
- 3 tablespoons BBQ sauce
- 4 tsp wasabi
- Sweet chili sauce to be served
- 1/8 head of red cabbage, finely chopped
- 1 carrot, grated on a large grater
- A few sprigs of fresh coriander, cut into larger pieces
- 4 burger buns
- 4 lettuce leaves
- 1 tablespoon of oil
- Salt and pepper to taste
A METHOD OF PREPARING
- Heat oil in a pan. Add the jackfruit and fry for 2-3 minutes. Add the BBQ sauce, reduce the heat, and add 4 tablespoons of water. Cover and simmer for 20 minutes.
- In a bowl, combine the carrots, cabbage, and cilantro. Add the fried jackfruit and toss to combine. Season with salt and pepper to taste.
- In a hot, dry pan, toast the buns, cut in half. Spread the bottom with wasabi, then add the lettuce and filling. Pour the chili sauce over everything and cover with the top half of the bun.
