INGREDIENTS

  • 1 can straw mushrooms
  • 2 kg of potatoes
  • 200 g of sausage
  • 2 onions
  • 100 g lard with cracklings
  • 2 eggs
  • 3 tablespoons of wheat flour
  • a large handful of chives
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of sugar
  • 1 teaspoon sweet paprika
  • Breadcrumbs for coating the baking tin

A METHOD OF PREPARING

  1. Peel the potatoes and grate them on a fine grater.
  2. Crack the eggs into the grated potatoes, add the flour, and all the spices. Mix thoroughly.
  3. Chop the sausage, onion, straw mushrooms, and chives. Heat the lard in a pan and sauté the sausage and onion. After a moment, add the chopped straw mushrooms. Cook for a few more minutes, then combine with the potato mixture.
  4. Add the chives, mix again, and transfer to a greased and breadcrumb-dusted baking dish. Bake at 200°C for about 90 minutes, or until golden brown on top. Serve the finished babka with fresh vegetables.
