INGREDIENTS

  • 1 can coconut cream for whipping
  • 1 can papaya pulp
  • 3 cups of wheat flour
  • 2 cups of plant milk
  • 1 teaspoon of baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons of sugar or substitute
  • 2 tablespoons of vegetable oil + enough to grease the waffle iron
  • 200 g blueberries
  • Optional: mint leaves for decoration

A METHOD OF PREPARING

  1. Place the coconut cream in a bowl, add sugar or sugar substitute and beat with a mixer until fluffy.
  2. In a second bowl, combine the flour, plant-based milk, baking powder, salt, two tablespoons of oil, and one-third of the whipped coconut cream. Mix on low speed until all ingredients are combined.
  3. Preheat a waffle iron and grease the plates with oil, add portions of the batter, and bake until golden brown. Serve the finished waffles with coconut cream and pulp, sprinkle with blueberries, and garnish with mint.
