Crispy turkey nuggets with yuzu and nanami paste

INGREDIENTS
500 g turkey fillet, diced
MARINADE:
- 2 tablespoons soy sauce
- ½ tablespoon rice vinegar
- ½ teaspoon garlic paste
- ½ teaspoon ginger paste
- ½ teaspoon chili paste
- 1 teaspoon coriander paste
- 1 spoon teriyaki sauce
BREADING:
- 1 Op. panko breadcrumbs
- 2 tsp spices for Japanese cuisine
- 4 eggs
- 4 teaspoons of potato flour
ADDITIONALLY:
- 2 tablespoons white sesame
- 2 tablespoons nanami chili paste
- 1 teaspoon yuzu paste
- 2 tablespoons chopped chives
- 2 tablespoons of mayonnaise
- Frying oil
A METHOD OF PREPARING
- In a bowl, combine all the marinade ingredients, then add the turkey and mix thoroughly. Refrigerate overnight.
- In a bowl, combine the eggs, Japanese seasoning, and potato starch. Dip the turkey pieces in the egg, then in the panko breadcrumbs, then in the egg, then in the panko breadcrumbs again.
- Heat the oil in a deep pan and fry the nuggets until crispy and golden.
- In a bowl, mix the mayonnaise with the yuzu paste.
- Serve the prepared nuggets with yuzu mayonnaise and chili paste, sprinkled with chives and sesame seeds.
