Creamy lentils in Massaman curry sauce with coconut cream
Do you like one-pot meals? @smyk_w_kuchni_blog comes up with just such an idea for a nutritious meal for the whole family. For this recipe, Karolina chose incredibly creamy Kara coconut milk, aromatic Kanokwan paste, and House of Asia's quick-to-prepare Chow Mein noodles.
INGREDIENTS
- 1 Chow Mein Noodles House of Asia
- 4-6 pieces Whole Kaffir lime leaves House of Asia
- Lime juice House of Asia
- 1 spoon Toasted sesame oil House of Asia
- 3-4 tablespoons White sesame House of Asia
- 200 ml Light coconut milk 11% Land defence
- 1 Massaman curry paste Kanokwan
- 2 cans of cooked lentils
- The white part of a diced leek
- 2-3 carrots, diced
- olive oil for frying the vegetables
- 2/3 cup unsalted peanuts
- spring onion
A METHOD OF PREPARING
1. Fry the vegetables in olive oil, add the drained lentils and fry everything for a few minutes.
2. In a pot, cook the pasta according to the instructions on the package.
3. Add the curry paste, peanuts, lime leaves, and coconut milk to the pan with the vegetables. Simmer until tender, add the cooked pasta, and season with lime juice. Sprinkle with sesame seeds, scallions, and drizzle with sesame oil.
