  • Greek Extra Virgin Olive Oil GAEA
  • Whole fish, e.g. trout
  • Salt and black pepper
  • 1⁄2 lemon, sliced ​​into rings
  • 1⁄2 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1⁄2 cup chopped fresh dill
  • Juice of 2 lemons

A METHOD OF PREPARING

  1. Adjust the oven rack to the center. Preheat the oven to 200 degrees Celsius.
  2. With a sharp knife, make two slits on both sides of the fish. Rub both sides generously with salt and black pepper.
  3. Stuff the fish with sliced ​​onion and lemon.
  4. Bake the prepared fish on the middle shelf of the oven for 5 minutes on one side, then turn it over and bake for another 5 to 7 minutes or until the fish is golden brown and soft.
  5. Combine the juice of 2 lemons with ½ cup of olive oil, pour the mixture over the fish and serve with cherry tomatoes and dill.

TIP: Add a teaspoon Dijon mustard to the olive oil and lemon sauce to enrich the flavor.
