INGREDIENTS
- 2 tsp original Dijon mustard
- 1 large loaf of crusty bread
- 120 g unsalted butter
- 2 cloves of garlic, chopped
- 15 g fresh parsley, coarsely chopped
- 15 g chopped chives
- 15 g chopped thyme
- 1 teaspoon of black pepper
- 40 g grated Parmesan cheese
- 150 g of grated mozzarella or cheddar cheese
- pinch of salt
A METHOD OF PREPARING
- In a skillet over medium heat, melt the butter. Add the garlic and cook for 30-60 seconds, or until the garlic begins to brown. Then add the Dijon mustard, salt, pepper, and chopped herbs and cook for another 30-60 seconds. Remove from the heat.
- Score the bread with a knife in a grid pattern, so that each slice is about 3cm long. Make sure the cuts only extend to ¾ of the loaf's thickness.
- Place the loaf in a baking pan lined with parchment paper. Spread the butter, mustard, and herb mixture generously over the bread. Add grated cheese to the indentations between the slices of bread. Bake for 30 minutes, or until the cheese is melted and golden brown.
- Remove the bread from the oven. Serve hot.
TIP: If the cheese melts too quickly, cover the bread with aluminum foil.
