INGREDIENTS

  • 120 ml Gaea Extra Virgin Olive Oil
  • 150 gr white sesame
  • 1 kg watermelon, peeled and seeded.
  • 250 g sifted flour
  • 150 g baking sugar
  • 80 g finely chopped walnuts
  • 2 tablespoons of maple syrup
  • 1 teaspoon of cinnamon
  • 120 ml vegan yogurt

A METHOD OF PREPARING

  1. Place the watermelon in a bowl and break it into small pieces by hand. Drain the liquids, then add the maple syrup, sugar, flour, nuts, and cinnamon, stirring with a wooden spoon until the mixture is smooth.
  2. Drizzle a shallow round or rectangular baking dish with half the olive oil and sprinkle with half the sesame seeds.
  3. Spread the dough over the sesame seeds, pressing it down with your hands. Sprinkle with the remaining sesame seeds and drizzle with olive oil.
  4. Bake at 180°C for 40-45 minutes.
  5. Slice the baked cake and serve with a dollop of vegan yogurt.
