INGREDIENTS

  • 2 tablespoons Dijon mustard
  • 2 slices of whole grain sourdough bread
  • 1 handful of young beet leaves
  • ½ pear, sliced
  • 1 carrot, thinly sliced
  • 2 slices of goat cheese
  • 1 tablespoon of almonds

A METHOD OF PREPARING

1. Toast the slices of bread on a hot grill or pan.
2. Spread mustard on the inside of the bread slices, then top one with chard leaves, a pear, a carrot, and goat cheese. Sprinkle with flaked almonds.
3. Place the second slice of bread on top of the sandwich.
TIP: You can use your favorite vegetables to make a sandwich.
