INGREDIENTS

  • 1 can yellow jackfruit drained and cut into small cubes
  • ¼ cup coconut milk
  • 1 cup of flour
  • ¼ cup of sugar
  • 28 g brown sugar
  • 1 teaspoon baking soda
  • Pinch of salt
  • 60 g melted butter
  • 1/4 cup of sour cream
  • 1 egg
  • ¼ cup of coconut flakes
  • 1 tablespoon of oil

A METHOD OF PREPARING

  1. Preheat the oven to 190°C. Grease a 6-muffin tin with oil.
  2. In one bowl, combine flour, sugar, brown sugar, baking soda, baking soda, and coconut flakes. In another bowl, beat the egg with the cream and butter.
  3. Add the dry ingredients to the wet ingredients and mix with a mixer on low speed. Add the coconut milk and jackfruit, then use a wooden spoon to combine.
  4. Fill the molds with the mixture up to 2/3 of their height.
  5. Bake for about 20 minutes. To check if the muffins are baked, insert a toothpick into one of them – if it comes out clean, the muffins are ready.
