Learn the recipe for a twist on Bolognese sauce. Swap the ground meat for green jackfruit, and the vegetarian version is ready. Instead of traditional noodles, use soba, which will taste delicious with the vegetable sauce.

INGREDIENTS

  • 100 gr soba noodles
  • 400 gr green jackfruit, pulled
  • 2 tablespoons garlic paste or 3-4 cloves finely chopped
  • 4 tablespoons of olive oil
  • 2 medium onions, sliced ​​into wedges
  • 2 tomatoes, diced
  • 1 small carrot, grated
  • 500 ml tomato passata
  • Salt and black pepper to taste
  • 1 teaspoon oregano or herbes de Provence
  • 100 g butter
  • Fresh herbs to serve
  • Freshly grated mature cheese (e.g. Parmesan)

A METHOD OF PREPARING

  1. Place the jackfruit in a strainer and rinse it under running water, then squeeze out any excess water.
  2. Cook the pasta according to the instructions on the package (leave a few tablespoons of the cooking water).
  3. Add olive oil to a heated pan, sauté the drained jackfruit for 5-6 minutes, then add the chopped onion, garlic paste, and grated carrot and sauté for another 5 minutes. Meanwhile, add the chopped tomatoes, passata, and oregano, season with salt and pepper, and stir. Cover and simmer for 20 minutes. Season to taste again at the end.
  4. Combine the prepared ragù with the pasta and cooking water. Add the cold butter, toss everything together, and serve with grated cheese.
