INGREDIENTS

• 1 teaspoon original Maille Dijon mustard
• 1 teaspoon Old French Dijon mustard 210g
• 2 potatoes
• 2 sweet potatoes
• 1/2 stick of butter
• 2 tablespoons of flour
• 2 cups of milk at room temperature
• 1 cup of grated cheese
• 1 teaspoon fresh thyme, chopped
• 1 teaspoon fresh rosemary, chopped
• 1 tablespoon of salt
• 1 teaspoon freshly ground black pepper
• a pinch of nutmeg

A METHOD OF PREPARING

  1. Preheat oven to 180 degrees C.
  2. Peel the potatoes and slice them thinly.
  3. Heat a frying pan over medium heat and melt the butter.
  4. Add the flour, stirring constantly until combined. Cook for a few minutes until it begins to smell nutty.
  5. Slowly add the milk, stirring constantly. Continue stirring until the sauce thickens.
  6. Add both mustards to the sauce and mix until combined.
  7. Then add spices, fresh herbs and cheese.
  8. Butter a baking dish and arrange the potato slices on top. Pour the sauce over the top and sprinkle with more cheese.
  9. Bake for 45 minutes covered with aluminum foil.
  10. After this time, remove the foil and bake for another 15-20 minutes or until the top is golden brown.
