Mushroom soup with buckwheat noodles chow mein

INGREDIENTS
- 60 gr dried shiitake mushrooms
- 1/2 package buckwheat Chow Mein noodles
- 1 teaspoon garlic paste or 2-3 cloves of garlic, finely chopped
- mushroom soy sauce to taste
- 1 spoon miso paste
- 500 ml vegetable broth
- 1 onion, diced
- 2 tablespoons of olive oil
- Black pepper to taste
A METHOD OF PREPARING
1. Soak the shiitake mushrooms in cold water. Bring to a boil, then let cool and cut into strips.
2. Pour olive oil into a pot, sauté the miso paste with the onion, add the mushrooms, and stir. Then add the broth and simmer over medium heat for 15-20 minutes.
3. Prepare the pasta according to the instructions on the packaging.
4. Serve the soup with pasta and fresh chives and dill.
